Super moist GF zucchini muffins that are refined sugar free! Perfect for little tummies to snack on.

Ingredients
Blender Ingredients
1banana
2eggs
1/2cupgood quality nut butter(free of added oils, stabilisers, or sugar)
1/4cup real maple syrup
1tsppure vanilla extract
Mix in the Following
2 cupsshredded zucchini(squeeze out extra liquid using a dish cloth)
1cup almond flour(we've found it works best with Bob's Red Mill super fine almond flour)
1/2cupdark chocolate chips
1tspbaking soda
1/2tbspground cinnamon
1/2tspsalt
Instructions
Preheat the oven to 350f (176c)
Add the banana, eggs, nut butter, maple syrup, and vanilla to a blender or food processor and blend until smooth (can also mash/mix by hand)
Pour batter into a large mixing bowl and stir in the remaining ingredients
Scoop into muffin tin (we love using unbleached liners but you could also grease with a little coconut oil)
Bake for 22-25 mins or until toothpick comes out clean
Let cool on a rack before eating. Enjoy!
Notes
If you don't have a blender or food processor you can mash the banana with a fork and mix the other ingredients by hand. But I'm all about convenience and efficiency in the kitchen and love a good blender recipe!
